new potatoes with herby salmon

750g (1 1/2lb) new potatoes
Knob of butter
Grated rind and juice of 2 limes
1 bunch of spring onions, sliced
4 pieces boneless, skinless salmon fillet, about 125g (4 oz)
each
4 tablespoons light crème fraiche
3 tablespoons chopped mixed herbs (such as parsley and
dill)
Salt and pepper
Lime wedges, to garnish
1 Cook the potatoes in a pan of lightly salted boiling
water until tender.
Drain and lightly crush with a fork.
2 Stir in the butter, half of the lime rind and juice and
half of the spring
onions and season with plenty of black pepper.
3 Place the salmon pieces on a foil-lined grill pan and
cook under a
preheated moderate grill for 6-7 minutes, turning halfway
through cooking,
or until the salmon is just cooked.
4 Mix together the remaining lime rind and juice, spring
onions, crème
fraiche and herbs. Serve the salmon with the potatoes and the
herby sauce,
garnished with lime wedges.

good for you. It is a myth that they are fatting; it is only
when they are cooked
in oil or when cream and butter are added that they become
so.
